I found this recipe when I was trolling the internet for a simple cookie recipe that didn’t require using a mixer. Making cookies is simple enough, but sometimes I feel so drained that even the idea of whipping butter with sugar seems daunting. Not even considering when you need regular AND brown sugar (here’s lookin’ at you chocolate chip!).
So I was delighted to come across this super easy Oatmeal cookie recipe from Martha Stewart. Not only can you make these in less than 30 minutes, start to finish, they’re a healthier version than their classic counterparts but equally delicious.
The original recipe calls for vegetable oil instead of butter but I use olive oil to give it and extra healthy kick, and it tastes great if adding cranberries.
On the other hand, when adding chocolate chunks use vegetable oil which has a neutral flavor.
This recipe is awesome if you’re cooking with kids. Super easy all-in-one bowl recipe that never disappoints.
